Caramelised apple and honey-maple slices

Ingredients

4 apples, peeled and sliced thinly
2 tablespoons maple syrup
2 tablespoons honey
1 teaspoon cinnamon
1 tablespoon butter

Method

Heat butter in a frying pan. Add apples and sauté for 8-10 minutes. Stir in maple syrup, honey and cinnamon.

Apple and honey muesli slice

Ingredients

125g butter
¼ cup honey
1 teaspoon bicarbonate soda
1 cup rolled oats
1 cup flour sifted
½ cup caster sugar
¾ cup dessicated coconut
½ cup dried apples, chopped
1 cup chocolate chips

Method

Preheat oven to 180.
In a large pot, combine butter and honey. Melt over a medium heat, stirring occasionally. Remove from heat. Add bicarbonate of soda.
Stir in remaining ingredients.
Place in a tin lined with baking paper. Bake for 20-25 minutes until golden brown.
Set aside to cool.
Cut into squares.

Apple and cinnamon mini muffins

Ingredients

2 cups self-raising flour
1 cup brown sugar
1 teaspoon cinnamon
2 apples, peeled and grated
1 egg, lightly beaten
¾ cup milk
100g butter, melted
Cinnamon sugar to sprinkle

Method

Preheat oven to 180.
In a bowl combine flour, sugar and cinnamon. Mix. Add apples, egg, milk and butter.
Gently combine together with a fork. Spray mini muffin tins and fill with mixture.
Sprinke with cinnamon sugar and bake for 10 minutes until golden.
Dust with icing sugar.

Mini honey cakes

Ingredients

100ml honey
2 eggs, lightly beaten
1 cup sugar
1/2 cup sunflower oil
½ teaspoon bicarbonate of soda
½ teaspoon cinnamon
1 ½ tablespoons cocoa
1 cup self-raising flour
1 cup flour
½ cup boiling water
1 apple ring to garnish
Cinnamon sugar to sprinkle

Method

Preheat oven to 180.
In a mixmaster combine honey, egg, sugar, oil, bicarbonate of soda, cocoa and cinnamon. Mix for a few minutes until well combined.
In a bowl combine the 2 flours.
Add flour and the boiling water alternately to the mixture, beating well after each addition.
Place patty pans in muffin tins and fill (3/4’s)with mixture.
Top with an apple ring and sprinkle with cinnamon sugar.

Mini apple and honey pancakes

Ingredients

2 cups flour, sifted
3 teaspoons baking powder
2 tablespoons sugar
pinch of salt
4 eggs, beaten
1½  cups milk
2 tablespoons butter, melted
2 apples, grated
extra butter for the pan
honey for drizzling

Method

In a large bowl combine flour, baking powder, sugar and salt.  Add eggs followed by milk until mixture is smooth. Stir in melted butter and mix. Fold through apple.
Heat a non stick pan with a little butter until surface is covered.  Drop spoonfuls of mixture into pan.  Cook for a couple of minutes until bubbles appear on the surface and base turns golden. Flip over and cook other side until golden.
Drizzle with honey.
