Potato and baby spinach salad

Ingredients
3 medium potatoes, scrubbed and cut in half (skin on)
2 tablespoons olive oil
1 tablespoon apple cider vinegar
Handful baby spinach
1 spring onion, finely chopped
2 tablespoons chopped parsley
Salt and pepper to taste

Method
Steam potatoes for 10-15 minutes or until just tender.
Cut into bite-sized pieces.
Whilst still warm toss in olive oil and vinegar.
Add spinach, parsley and spring onion and stir gently.
Season with salt and pepper.

Mini cheese and vegie matzo muffins

Ingredients
½ cup matzo meal (fine)
¼ teaspoon baking powder
½ cup grated cheese
1 egg, lightly beaten
2 tablespoons olive oil
3 tablespoons milk
2 stalks silverbeet (stalks removed), chopped finely
2 tablespoons grated carrot
2 tablespoons grated zucchini
1 tablespoon chopped  leek
Extra cheese for sprinkling

Method
Preheat oven to 180.
In a bowl combine matzo meal, baking powder and cheese.
Add all the veggies and stir.
In another bowl combine egg, olive oil and milk. Mix well.
Pour wet mixture over dry mixture and stir to combine.
Place patty pans in muffin tins. Roll mixture with hands to form walnut sized balls.  Sprinkle with a little extra cheese and bake for 15-20 mins until golden.
(Makes approx 15 mini muffins)

Delicious green smoothies

Ingredients

3 stalks of silverbeet (or a large handful of spinach)
1 banana
1 frozen banana
¼  small pineapple
1-2 cups water (depending on how thick you like it)
Ice

Method
Place all ingredients into a blender and blend until smooth. Serve immediately.
(serves2-4)

Green smoothies are a great way to start the day. They are simple to make and packed with vitamins and minerals to fuel you with lots of energy for your day. You can be creative and put any of your favourite fruits into them!
